HOLIDAY MULE infused with (ginger beer, gin/vodka)

- INGREDIENTS -
(makes 1 cocktail)

1/2 oz raw sugar and water (simple syrup)
1/2 oz cranberry juice
1 1/2 oz gin or vodka
1/2 oz cranberry juice
2 oz chilled ginger
1 rosemary sprig
Orange slice, for garnish
Sugared cranberries, for garnish


- SUGARED CRANBERRY GARNISH - 

Bring 2 cups sugar and 2 cups water to a simmer over low heat
Remove from heat before sugar and water boils
Pour syrup over two cups of cranberries, and refrigerate overnight
Drain cranberries the next day and let dry for a few minutes until tacky
Roll cranberries in superfine sugar and let dry in a single layer for 1-2 hrs.

- INSTRUCTIONS - 

Combine syrup, cranberry juice and gin (or vodka) Pour all over ice and top with ginger beer Serve the garnish with rosemary, orange slice and skewered cranberries

CHEWY GINGER COOKIES

- INGREDIENTS -
(makes 12 cookies)  

2 Cups flour (all purpose) 1 teaspoon baking soda 1/4 teaspoon sea salt 3 teaspoons ground ginger 2 teaspoons cinnamon 1 1/2 teaspoon ground cloves 1/2 Cup coconut oil 1/4 Cup unsulfured molasses 1/4 Cup non-dairy milk 1 Cup brown sugar 1 teaspoon vanilla extract 1/3 Cup chopped candied ginger pieces 1/3 Cup white sugar (for coating)

- INSTRUCTIONS - 

Sift flour and spices together and mix until well combined. In separate bowl, mix coconut oil, non-dairy milk, brown sugar and molasses and whisk until blended Fold wet ingredients into dry ingredients Without totally combining, add chopped candied ginger

- PRE-OVEN - 

Take roughly 1/4 cup of cookie dough and roll into ball, then roll around in white sugar Slightly press cookie balls onto a baking sheet, lined w/ parchment paper Bake at 350 F for 15 mins

PEPPERMINT WHITE CHRISTMAS

- INGREDIENTS -  

1 Bottle chilled champagne
White creme de cocoa
Candy canes

- INSTRUCTIONS - 

Crush a whole candy cane in a Ziplock bag with a rolling pin, until you're left with a semi fine powder Dip the rims of champagne flutes in small dish of white creme de coca and then after in crushed candy cane Fill champagne glasses 1/3 full with white creme de coca and then the remainder of the way with chilled champagne Garnish with a whole candy cane to add color and flavor
